Autumn Grounding Salad
Don’t know about you, but I tend to eat less salads during the colder months of the year. The marinated shredded kale, no matter how delicious, does not make the cut for me anymore.
It’s such a big satisfaction to chew a crisp salad that is well seasoned, exploding with flavours and colours.
This is what I’m proposing to you now - a crisp salad, with ingredients that you can find year-long, but are more accessible (and taste better!) during colder times. Also, the main ingredients in the salad have high water compositions, keeping you and your digestive system better hydrated.
In the photos, I played with layering the salad, but you don’t have to! The salad will taste great if you mix everything together in a bowl as well.
I hope you’ll enjoy this simple salad and that you’ll include it in your meal prep. It goes great as a starter for any main meal.
Autumn Grounding Salad
Yields 4-6 portions
Instructions:
Peel and grate all the veggies and the apple.
Prepare the dressing by mixing the lemon juice, olive oil, salt, pepper and cayenne pepper (if using).
Place a dry pan on high heat. Once the pan is hot, put the chopped almonds and roast them for 2-3min, stirring them frequently to make sure they won’t burn.
Easy fix - mix all the ingredients together.
Platting fix for a special occasion or a rainy Monday - on a plate, arrange the veg & apple in order of their colour, squeezing some of their liquid out. Place the beetroot, carrots, apple and celeriac, drizzling with the dressing and sprinkling chopped roasted almonds on top and parsley.
No matter what you choose, the result will be the same.
Store it in an airtight container in the fridge and it will taste amazing for 4-5 days.
Ingredients:
1 medium beetroot (or 2 small ones), peeled & grated
2 carrots, peeled & grated
½ celeriac root, peeled & grated
1 apple, peeled & grated
Juice of one lemon
2 tablespoons olive oil
1 teaspoon salt
Pinch of crushed black pepper
50gr almonds, chopped & roasted
Optional: chopped parsley, pinch of cayenne pepper
