Comfort Veggie Pasta

First time I made this recipe was an autumn day when I also made the Banana bread for dessert. I was in the mood for a cheesy texture and some pasta. Works like a charm after a hot yoga class!

Comfort veggie pasta

Servings: 2

Ingredients:

  • 2 cups wholemeal penne pasta
  • 3 cups fresh baby spinach
  • 1 small onion
  • 2 tbs olive oil
  • 2 garlic cloves
  • 1 cup tomato sauce
  • 1/2 cup soaked walnuts
  • 2 tbs nutritional yeast
  • spices: salt, pepper, oregano or italian herbs

Instructions:

  1. Soak the nuts for 6-8 hours or fast forward soak them in warm water for 20min.
  2. Blend the soaked walnuts, the nutritional yeast, a pinch of salt, pepper and a bit of water.
  3. Saute the onion in the 2 tbs of olive oil until it is translucent.
  4. Add the spinach and cook it until it’s wilted.
  5. Meanwhile, place a pot with water on the stove so you can boil the pasta according to the instructions.
  6. Mix the nut mixture with the spinach and add the pasta and the tomato sauce. Let it simmer for a couple of more minutes.
  7. Serve it hot with some herbs sprinkled on top.
