Courgette Soup - Refreshing & Easy to Make
As I have been working from home for over 5 weeks now, I am always looking for easy recipes. Before the lockdown, I did not have to worry about lunch as the company I’m working was offering breakfast and lunch. When I was cooking at home I was focusing on more gourmet things and learning new techniques. Things have changed now and I’m cooking more than ever which also means that I don’t always have the time and energy to make gourmet dinners.
My partner showed me how to cook this easy soup. It only has 2 ingredients, water and spices. This soup can also be base for other veggie soups, just add some carrots, potatoes and celery towards the end. I kept this as simple as possible and it can be accompanied with a sandwich or can be a great starter when you are planning a more sophisticated menu.
Courgette Soup
4-6 servings
Instructions:
Add the cubbed courgette, chopped onion and water into a medium sized pot over medium heat. Bring to boil and add let it simmer for about 10min. After 5min of simmering you can add the green leaves (if using any).
Using an immersion blender, blend the courgette, onion and water until everything is creamy. You can also use a food processor that can handle hot food.
Mix the olive oil, herbs, salt and pepper.
It goes really well with a bit of hot sauce :).
Ingredients:
1 large courgette, cubbed
1 large onion, chopped
water to cover the vegetables
1 Tablespoon dry herbs (basil, oregano, rosemary)
1 Tablespoon olive oil
salt & pepper to taste
optional: any green leaves (cauliflower, spinach, kale)
