Courgette Appetizer

Did you know that you can eat courgettes (zucchinis) without cooking them?

They are yummy and refreshing - perfect for summertime.

Courgette Appetizer Diana Sutac Plant Based

Instructions:

  1. Slice the courgettes with a mandolin or vegetable peeler.

  2. Add all the ingredients into a large food container.

  3. Cover the food container with a lid and in the words of Taylor Swift: shake, shake, shake it off.

  4. Put the container in the fridge for about 30min. You can eat the appetizer straight away, but it tastes better is if stays in the fridge for at least 30min. I sometimes leave it there for a couple of hours. It tastes divine the second day.

Ingredients:

yields 4-5 servings

  • 3 courgettes

  • 3 cloves of garlic

  • 5 tablespoons olive oil

  • 2 teaspoons rosemary

  • 2 teaspoons oregano

  • juice from 1 lemon

  • 1 tabelspoon sea salt

  • chilli flakes & pepper to taste
