Healthy Banana Bread

Oh banana bread. What’s not to love about banana bread? I do have a friend that is allergic to bananas and I think she is the only one of my friends who wouldn’t like this dessert. This banana bread was a special guest to many of our potlucks at work. It’s so easy to make and so delicious! Also, the entire house is going to smell amazing while baking it! 

How do you like your banana bread? Maybe some raspberry nice cream next to it or some chocolate chips on top?

Ingredients:

  • 4 ripe bananas

  • ¼ cup maple syrup 

  • 1 cup almond flour 

  • 1 tsp baking powder 

  • 1 tsp apple cider vinegar

  • 2 cups oat flour (just blend regular oats until you get the flour, no need to buy it) 

  • ¼ cup coconut oil

  • 1 pinch of salt

  • 1 pinch of cinnamon

  • 1/4 tsp vanilla extract.

Instructions: 

  1. Preheat the oven to 190 degrees C. Grease a loaf pan with some neutral vegetable oil (or even a bit of coconut oil).

  2. In a bowl, smash 3 bananas with a fork until you get a creamy consistency.

  3. Add the melted coconut oil, maple syrup, apple cider vinegar and mix it together.

  4. Add the oat flour, almond flour, baking powder, salt, cinnamon, vanilla extract and blend all the ingredients together with a wooden spoon.

  5. Add the mixture to the greased loaf pan and add the remaining banana cut in half on top like in the above photo.

  6. Bake it for about 30min. Around the 25min mark check the banana bread and see how baked it is by using a toothpick.

  7. When the banana bread is done baking, it should be golden on top. Allow to cool in the loaf pan before serving it.
