Tomato & Tofu Fritters

If you’re looking for something to do with the tomatoes and tofu from your fridge, you are in the right place! I’m delighted to find tomatoes that taste so good around this time of the year. They are delicious on their own, but if you are looking for comfort food that can be cooked in 30min, why not try to make some fritters?

For this recipe I used firm tofu to make a vegan option, but it can be substituted with a bit of feta if needed. Since I developed this recipe, we made it a couple of good times until now. Sometimes we cook a double batch so we can only heat them up for a quick dinner.

My mom thought me a trick to make sure I always have herbs around that I am happy to share with you now - next time you’re out shopping, buy more parsley, basil, dill or whatever herbs you like. Wash them well, let them dry, chop them and freeze them in containers. Next time you need some for a recipe, just take what you need from the container.

I like to eat these fritters with roasted potatoes and hot sauce. They are so versatile that you can pair them with rice, couscous or a salad. Are you ready to try my recipe?

Tomato & Tofu Fritters

Yields about 20 fritters

Instructions:

  1. Mix the chopped tomatoes and the crumbled tofu in a bowl. Use a potato masher to mush the tomatoes more and make sure they leave all the juice.

  2. Add the flour, baking soda, dill, salt & pepper and mix everything well.

  3. Put a pan on the stove with 1 tablespoon oil. Once the pan is hot, scoop 1 tablespoon of the mixture and add it to the pan. Continue the process until the pan is full with little fritters. After 2 minutes, turn the fritters on the other side and cook them.

Ingredients:

  • 600 gr tomatoes, chopped

  • 150gr firm tofu, crumbled

  • 1 cup all purpose flour

  • 1 teaspoon baking soda

  • 2 Tablespoons dill

  • salt & pepper to taste

  • extra virgin olive oil to lightly fry them
